Walk into any commercial bakery and you feel it immediately: a wall of hot, greasy air pouring from the oven and proofer exhaust hoods, while the make-up air system fights to replace it with conditioned air pulled in from outside. That exhaust can leave at 150 to 250 degrees C carrying vaporised fat and flour dust, and in winter the building burns gas just to reheat the incoming replacement air. Oven and deck-oven exhaust is not ordinary ventilation air. It is hot, it is high-volume because bakers run long, continuous shifts, and it is loaded with grease aerosols and fine flour or sugar particulates that condense on any cool surface they meet. The make-up air that replaces it must arrive at a comfortable temperature, so in winter the HVAC system preheats cold incoming air against the same energy the oven just threw away. The scale is large: a single rack oven can exhaust several thousand cubic metres per hour, and a mid-size plant runs many of them. Air-to-air recovery intercepts that stream at the hood and pre-conditions the replacement air, which is the single highest-return measure in a bakery's energy balance.

The core has to survive a hostile, fouling airstream, and that decides the design. A plate core is the right answer for most bakeries because it is a stack of smooth, separable plates that can be pulled and washed daily; grease collects on the plates, but a soak and rinse removes it, and there is no rotating matrix for it to bake into. A rotary wheel, by contrast, presents a continuous honeycomb surface that grease quickly fouls and that is far harder to clean in place. Where the exhaust is especially dirty, specify removable, drainable plates with a pre-filter ahead of the core and easy access for the night-shift clean-out.

Because bakery air is also a food environment, the plate material should be food-grade stainless or a coated aluminium that tolerates wash-down chemicals, and any gaskets should be rated for the cleaning agents used. The recovered energy is sensible only, which is exactly what a bakery needs: you want warm make-up air, not moisture moved from greasy exhaust into the supply.

Hot, greasy air is a fire pathway, so the recovery device must sit inside the building's fire strategy, not outside it. Specify grease-rated, UL- or equivalently rated construction for the core and its housing, and keep a documented access and cleaning schedule tied to the hood-suppression and exhaust-inspection regime. In many jurisdictions the exhaust duct and any energy-recovery unit in it must be within reach of the automatic sprinkler or fire-suppression system, and the unit must not obstruct the fire damper or the make-up air smoke path. The recovery core should include a fire/smoke bypass so that in an alarm the exhaust routes around it, preserving the designed fire airflow. These details are not optional extras; they are part of the permit.

Baking is among the most energy-intensive food processes, and the exhaust is a continuous, high-temperature loss, so recovery economics are strong. A well-sized plate core at 60 to 70 percent effectiveness on a multi-oven line typically pays for itself in one to three years through reduced gas consumption, and the saving compounds because the make-up air heater and any associated cooling both work less. Size the core from the design exhaust flow and the winter temperature lift, confirm the pressure drop against the existing fan, and add a summer bypass so the unit free-cools when recovery would add load.
